Wheat is one of the first plants domesticated by man. The original varieties were einkorn wheat (Triticum monococcum commonly known as small spelled) and emmer (Triticum dicoccum also known as medium spelled). The spread of these plants for food has triggered major cultural changes throughout the world. In addition to corn and rice, wheat is among the most important food plants for human consumption and is cultivated on all continents of the world. Wheat has the largest cultivation surface. The main producing countries are China, India, USA, France and Russia.
