LIME

Often confused with the lemon due to the similarity both in shape and beneficial properties, the lime tree grows and bears fruit up to three times a year and reaches four to five meters in height. The harvest of this fruit begins in July: it is picked when it is still green, when it is at its best and most juicy, and contains up to 6% citric acid. The Lime fruit belongs to the Rutaceae family, and seems to be the result of the cross between the citron and the lemon. Lime shares many beneficial properties with this last fruit.
