Already in 60 AD. Pliny the Elder cited the so-called provatura, produced in Campo Cedicio, an area now traceable near the Volturno river, in Campania (Italy). To find the first written source attesting to the use of the term "mozzarella", we must go back to around 1570. It was used in a document by Bartolomeo Scappi, chef of the Pope's Court, in a recipe book where Scappi wrote "capo di latte, fresh butter, flowered ricotta, fresh mozzarella and snow of milk".
