The onion (Allium cepa) is one of the oldest vegetables consumed by man. Originating from the Asian continent (Iran or Afghanistan), it already enjoyed a great reputation among the Egyptians. Represented in the frescoes of the tombs of the pharaohs, she was venerated as a divinity, to be called as testimony to oaths or placed in the hands of the deceased as a pass to the afterlife.

Administered by Alexander the Great to his troops to increase their value, it was placed under the dominion of Mars and introduced into Europe by the Greeks. In classical times, onions were classified according to the areas of origin and those from the Greek city of Megara are said to be particularly renowned.
