Let's start by analyzing the etymology of the word. Maccherone is a term from Campania, as attested by a document from 1014 in Cava in which the word Mackarone appears. The linguist and glottologist Giovanni Alessio states that the word can have two origins: from the Byzantine Greek 'makaronia' which stands for 'hearse which over time would become 'funeral meal' and therefore dish to be served during the funeral; the second origin could be from the Greek 'macharia' or barley soup to which the suffix -one would then have been added. According to the Italian glottologist and linguist Giacomo Devoto, the word maccherone has a double derivation: from macco which stands for 'polenta di fave' which would be a cross between makka (Mediterranean term) with the Latin maccus, "with the big jaw", in turn linked to mala, "jaw", from an archaic 'maksla'.
